Happy Easter, everyone! I know I’m a bit late in that sentiment… but better late than never, right?
I actually had a pretty lonely Easter. AJ was out of town (but he’s back now!!) and I didn’t really want to drive down to my parents’ house in Orange County all alone. Dedas hates the car and I hate traffic, and I was down there two weeks ago. So I actually spent Sunday doing things around the house, getting some work in, and enjoying the springtime weather we’re having around here.
One of the things I love most about spring and summer is… tomatoes! I know I am not the only one who feels that way. Gimme a hand if you do, too. 👋
And one of my favorite things to do with tomatoes is to make salsa. I know that making salsa can seem complicated, but it’s actually super easy. I make this cherry tomato salsa all the time when we need something to top our tacos/burritos/chips with. It’s so versatile!
